An easily-cultivated vegetable appreciated for its dietary qualities and tremendous assets to the winter meal plan.

Red beets thrive in any soil and are very easily manageable; they should, however, be kept moist and the soil should not be freshly fertilized. Sow in rows. Transplant once the 2nd leaf appears in order to give each plant enough space. At harvest, twist off the rosette but take care not to hurt the tuber. The beets are ready to harvest when the leaves become discolored, brown, and blotchy.

Do not plant near spinach or chard. Beets may be planted in the same spot every 3-4 years..

Young beets can be eaten raw.
